Summer Saute in White Wine Sauce

This summertime favorite is one of those dishes that is so easy to throw together.  It is a fast healthy meal that my whole family loves! Feel free to add whatever fresh veggies you have on hand or omit those your family does not like. I serve this with warm crusty french bread.

For a quick dessert, slice some strawberries mix them with a little sugar, slightly mash with a fork and pour over slices of angel food cake topped with whipped cream!

 

Summer Saute


Serves 6-8
2 fresh tomatoes ~ quartered and then half each quarter
1 large zucchini thinly sliced
2 yellow squash thinly sliced
1 pkg sliced mushrooms
Chopped fresh basil (about a handful or more if you love basil like I do)
4-5 cloves of garlic thinly sliced (or minced)
1 medium white or yellow onion thinly sliced
Olive oil
White wine or white cooking wine
1/2 tablespoon dried Italian seasonings
Salt & pepper to taste
2 chicken breast cubed (optional)
Angel hair pasta or orzo (for extra fiber try whole wheat pasta)

Pour a generous amount of olive oil in a large heavy skillet (about 4-5 Tablespoons) over medium heat
Saute onion until translucent, about 5 minutes
Add garlic and saute until just fragrant, about 2 minutes
Add in chicken and saute until browned on all sides, about 5 mins.
Sprinkle Italian seasonings over chicken
Add mushrooms, zucchini and squash saute until tender about 10 minutes
Add tomatoes and half of the basil
Pour in 1/4 cup to 1/2 cup white wine, scrap the bottom of the pan to deglaze (which is just a fancy way of saying: use a cool liquid to get up all the brown bits stuck on the bottom)
Cover and simmer on low for 10-15 minutes making sure the chicken is cooked through.
Cook pasta according to package directions… I usually cook the pasta while the vegetables are simmering.
Taste saute mixture and add salt and pepper as you like
Serve the saute over the pasta… and sprinkle with remaining basil
